Sunday afternoon we were preparing to have twenty-five people come and watch the big game when I realized I had neglected to make my husband muffins for the week. Since I was off the hook the week before, I guess it just slipped my mind. What is a girl to do? I grabbed my computer and went to Allrecipes.com. I found a Banana Chip Muffin Recipe, tweaked it a bit, within 10 minutes the muffins were baking in the oven. I didn’t even use my mixer! These muffins are moist, have great banana flavor, but above all they are very easy and they are finished in a matter of minutes.
Banana Chip Muffins
1 3/4 cups all-purpose flour
1/2 cup white sugar
1/4 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup semisweet chocolate chips
1 egg
1/4 cup vegetable oil
1/4 cup milk
1 1/2 cup ripened mashed bananas
Preheat oven to 350 degrees F. Line 6 jumbo muffin cups with paper liners or 12 standard size.
Measure flour, sugars, baking powder, salt, and chocolate chips into a large bowl. Mix thoroughly, and make a well in the center.
Beat the egg in a small bowl until frothy. Mix in cooking oil, milk, and bananas. Pour mixture into the well. Stir only to moisten. Batter will be lumpy. Fill prepared muffin cups 3/4 full.
Bake at 350 degrees F for 25 minutes or until center is set.
