These muffins are a great for fall, but when we got home, I thought they sounded so good! I first had them shortly after we had Ean. My friends Lindsay and Aaron brought them over. So easy…almost cheating. Or maybe it is just using your resources.
(Pumpkin) Spice Muffins
1 Spice Cake Mix
1 15 oz can pumpkin puree
1/2 cup water
Preheat oven to 350 F. Line 8 jumbo muffin cups with liners or 14 standard cups. Combine ingredients until mixed well. Spoon into prepared muffin cups. Bake for 20-25 minutes until centers are set. Cool on wire wrack.
After muffins have cooled, sprinkle with powdered sugar.
