My mom has a few recipes that she is famous for…this is one of them. It is also one of our family fall and winter must haves. My Grandpa Fred always insisted that no one made better caramel corn than my mom, and I would have to agree.
Linda’s Caramel Corn
12 quarts popped popcorn
1/2 cup white syrup
2 cups brown sugar
2 sticks butter
1 teaspoon salt
Preheat oven to 250 F. Bring syrup, brown sugar and butter to boil for 5 minutes. Remove from heat and add salt. Pour popcorn into a large roaster. Pour sugar mixture over popcorn. Mix carefully. Sit roaster on lowest rack. Bake at 250 F for an hour, stirring ever 20 minutes.
